One of the Worlds Most Diverse Food Cultures

Growing up in one of the world’s most diverse food cultures must have been fascinating!

Off We Go Exploring!!

Today we explore the Punjab State of India.  Even the state name (meaning five rivers) denotes life, lush areas and fish.

The region, lushly fertile, is known as the “Bread basket of India.”  With a climate ranging from 7degrees in “winter” to the upper 30’s in the warmest season, it’s actually quite similar to southern Ontario.

The diversity of people in this state comes from successive waves of invaders looking to benefit from the riches of the land.

With the fertile land comes such a variety of crops leading to some of the world’s most loved culinary dishes.

Imagine the Diversity!!

Travelling upward from the southern states to the Punjab Region allows one to experience firsthand – the culture and cuisine so wonderful.

Imagine the fields and markets to the south filled with fruit, vegetables, teas, sugar and of course…spices!

Without India it’s believed our food worldwide would have been found to be very boring!

Travelling through India allows a culinary experience not readily found elsewhere.

In some areas entire states are nearly all vegetarian while in others meat is very prevalent.

Introducing the Punjab!

The “taste of India” is very crowd pleasing and indicative to Punjabi cuisine.

Such a variety of masalas, desi ghee, and thick creams are synonymous with the tender flavors appreciated the world over.

Punjabi cuisine has a balance of everything – neither too strong nor too mild.  Butter Chicken and Dal Makhani are the two most sought after dishes in the cuisine worldwide.

Many meals in the region are still made using wood fires and masonry ovens or the tandoor (A Punjab style underground oven).

As you pass through the region you might share the street with elephants, water buffalo, cattle, other livestock, as well as the usual cars, scooters and tuk tuks!

Welcome to the Menu!!

It should come as no surprise that dairy products play a huge part in the region as well.

The Indians use milk from both cattle and water buffalo to make yoghurt, butter and paneer (Indian cottage style cheese) as well as the delicious buttermilk found in various flavors of Lassi (Milk based drink either sweet or savory).

The meats used in the region most commonly are poultry, lamb and goat.

Many of us have enjoyed Butter Chicken, Biryani, Kebabs or Keema!

As utensils generally are not used, the bread served with a meal becomes an important tool.  Often used is Naan or Roti so that every last drop of the wonderful meal can be eaten.

It’s So [email protected] Italian Bakery Cafe

One of Italy’s most well known culinary ambassadors was Catherine de Medici.  She’s credited with introducing a long list of Italian cooking ingredients to France when she became Queen.

From there Italian culinary dishes became known throughout Europe; coming to Canada in the 1950’s.

The Queens of Italian Cuisine!

Barrie is so lucky to have Rosie Carvhalo and her staff creating such wonderful culinary dishes for us. Offering wonderful homemade creations of Tomato, Rose, Alfredo and Meat sauce, and some of the best Cannolis around!! 

Liscious Italian Bakery Café on Mapleview at Huronia offers some of the freshest and tastiest Italian meal choices to be found.

Licious Catering

Rosie, with her background in catering, also operates Licious Catering; mainly catering to local Daycare facilities.  They provide our younger ones with a 4 week rotation of menus that are nut free, healthy wholesome meal choices.  They also have great event catering options!

Rosie worked at Fortino’s to our south in 3 different food departments.  Her love of creating wonderful, authentic dishes to serve grew right into a dream of opening her own bakery.

Barrie residents were blessed late last year when the dream became a reality.

Fresh Never Frozen

Everything at Licious is fresh and never frozen.  All food is prepared from scratch and sourced as locally as possible.

Helping Hands

Throughout the Pandemic, Licious has sure done their part to help!  Partnering up with a program called meals2frontline, a wonderful program that was created to say Thank You to our frontline workers for everything they are doing during these difficult times. Next month the 240 staff at Bradford Valley will be receiving their delicious hot meals as a THANKYOU!

Mangia! Mangia!

The goodwill at Licious doesn’t stop there though.  Because they pride themselves on “fresh daily”, leftovers are donated at the end of each day!

As most Italians – Rosie and Carm are well known for their love of feeding people!  They make bulk orders available to families with discounts as well.  Rather than only offer particular combinations, Rosie would have her customers “not choose just to choose – but to choose because it’s what they want.”

There is a hot table at the bakery tucked behind the scene to allow for short wait times.  The staff wishes everyone could see it but feel that following COVID protocols is extremely important.

Licious is a family owned bakery that offers fresh bread, espresso, coffees, specialized lattes, veal, and chicken sandwiches and much more!

Plans to Expand!

As they expand they’ll soon be introducing made to order custom cakes

It’s All About Easter at Polski Deli!

Bunnies, chicks and chocolate – it’s all about Easter at Polski Deli.  Celebrations around the world have many different traditions.

It's All About Tradition!

The traditions brought to Canada by new immigrants only add to the beauty of each and every celebration.

One of the most well-known Polish Easter traditions is Pisanki, the 5,000 year old art of hand painted Easter eggs.  Painted in the batik style, patterns are drawn onto the eggs in wax.  The eggs are then immersed in natural dyes, taken out and heated to remove the wax leaving behind beautiful intricate patterns.

Those along with many other handmade artifacts make Easter very beautiful.

The Easter Meal!

Today we’ve also learned how important the traditional Easter meals are as well.

On the Saturday of the Easter weekend a small basket of food to be served next day is taken to the church to be blessed.

The basket contains Pisanki, sausage or ham, a piece of cake and a sugar lamb.

Sunday morning is a cold breakfast of ham, sausage, roast meats, pate, eggs, horseradish relish and of course Babka (Sweet yeast cake)!

There may also be treats of Sernik (cheesecake) or Mazurek (Shortbread cakes), to name a couple.

Have you Ever!!!

On a more amusing note is the practice of Smigus-Dyngus or National Water Fight Day on Easter Monday.  Maybe not practiced here as much, but still going strong in Poland!

Whether you favor the meats and/or cheeses from the deli or delectable cakes and pastries – as the holiday comes closer there is so much to choose from.
