    If you’re like most people, lasagna is a meal for all times.  Whether it’s a go-to meal for family gatherings or the star of the show at a celebration; a grating of fresh Parmigiano reggiano, a slice of warm buttery loaf along with your favorite pinot noir elevates lasagna to a gourmet meal fit for royals.  Thus what follows brings the story of lasagna to your family kitchen.

    The Story of Lasagna Goes Like ...

    The origin of the word lasagna can actually be traced to Ancient Greece.  Historians have found that it’s derived from the word laganon or the first flat sheets of pasta dough cut into strips.  Eventually through time, the Italians allowed the dish to evolve.  The lasanum, in Italy, was the name for the container that the dish was served in, but the meal itself soon took over the name.

    Lasagne is the plural word for one sheet of the pasta, but is used regionally throughout the country.  Northern Italians use the plural while those in the south use the singular lasagna as we know it.

    During the middle Ages, the first reference to more modern day lasagna can be found in an English Cookbook.  This treasure described the dish as being the layers of pasta, but without tomatoes.  It wasn’t until the late 1800’s that an Italian cookbook mentions the addition of tomatoes.

    Eventually the city of Naples seemed to stand and take the evolution of Lasagna, known as Lasagna di Carnevale or lasagna with meat.  At that time it was created with local sausage, ricotta or mozzarella cheese, hard boiled eggs and a Neapolitan ragu or sauce.  Over the years many family favorite variations have been created as family traditions.

    Different regions throughout Italy have distinctly different versions of the dish; however Naples stands out as the epicenter of culture and cuisine.  It was those recipes that first travelled the globe as immigration increased.

    The original inventor of the dish could never have imagined what impact it would have even in today’s world, and what nutritional value it would contain.

     

    There are Some Great Benefits Beyond Taste

    When discussing lasagna history, never have carbs tasted so good, and there are lots of carbs for sure.  Carbs bring energy to blood cells and help drive essential daily bodily functions.  Most of this comes directly from the pasta with a smaller amount in the sauce and veggies.

    This favorite dish is full of B vitamins which are responsible for your body’s metabolism.  The beef found in most recipes provides iron which, of course, promotes healthy circulation. Whatever veggies are added help to increase vitamins A and C as well as adding a delicious depth of flavour to the dish.

    Of course, we realize that lasagna is an excellent source of dietary protein and fat which is what creates and maintains healthy tissue.  On the other hand, we know that lasagna is certainly not considered to be a ‘health food’ but the structure of the dish allows for culinary substitutes to assist with increasing veggie intake or changing meats to leaner cuts.

    The wondrous cheese that holds the dish together so well is what should have some limiting factor.  Cheese is high in fat and sodium so should be used with care.  The best choice at the table is to enjoy a moderately sized serving with a fresh green salad – if you’re able.
