Isolation Menus – Apple Pecan Pancakes With Greek Yogurt
2 Cups Flour
2 Teaspoons Baking Powder
1/4 Teaspoon salt
1 Tablespoon Sugar
2 Whole Eggs
2 Cups of Milk
4 Tablespoons Chocolate Chips
1 Tablespoon Melted Bacon Fat
In a large bowl, mix all of the dry ingredients and stir together until well blended.
In a separate bowl mix together eggs and milk, then pour into the dry ingredients and mix until mixture is smooth.
If you want to add in the chocolate chips or bacon fat do so now. these are great to add just a touch of flavour.
Cook Pancakes in a medium heat non-stick pan with a touch of canola oil. I like to flip mine twice so both sides get a nice crispy outside.
Apple in Maple Syrup Butter:
4 Macintosh Apples Sliced
4 Tablespoons Maple Syrup
1 Tablespoon Butter
1/2 Teaspoon Cinnamon
1/2 Vanilla Extract
In a medium saucepot cook all ingredients for about 5 to 10 minutes until soft.
To Build up the plate place pancake down the some apples and then pancake and then more apples. Top the pancake tower with a generous tablespoon of Greek yogurt, pecans and loose granola and you all ready to have some delicious pancakes!!
I really enjoy this recipe because it simple and also you can change many of the parts. The added crunch from the granola and pecans is a nice touch to the fluffiness of the pancakes and the Greek yogurt is a nice tartness to the sweet maples apples!! Adding the melted bacon fat into the pancakes makes for a nice smokiness with the apples. For any adult various try adding you favourite whisky in with the apples and the start of cooking!
