Mouthwatering Chicken From The Grill

BBQ chicken is one of those dinners nobody at the table will complain about. Unless it’s dry and overcooked.

Not this recipe. It’s a simple composition that anyone can master, and one that is so tasty you’d be forgiven for claiming it as your own. (And if you pull it off, you might well end up wearing the crown as the King of the Grill in your ‘hood)


  • 1¾ lbs boneless, skinless chicken breasts
  • 6 tablespoons extra virgin olive oil
  • large garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 1¼ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1½ teaspoons lemon zest, from one lemon

Place the chicken breasts in a zip-lock bag; using a meat mallet, pound to an even thickness.

Add the chicken breasts to the bag and work the marinade into the meat until evenly coated. Seal the bag and place it in a bowl in the fridge. Let the chicken marinate for at least 4 hours or overnight.

Preheat the grill to high and oil the grates. Place the chicken breasts on the grill and cook, covered, for 2 to 3 minutes per side. Be sure not to overcook! Then transfer the chicken to a platter and serve.
