What is the Good Food Box

Good Food Boxes are packed with fresh, high-quality, seasonal fruit and vegetables.  With the box menu changing monthly, each Good Food Box presents a convenient and affordable way to eat good healthy food.

The Good Food Box can be purchased monthly for $17.00.  Ordering by the first Wednesday of the month gives you a whole box of yumminess to pick up the following Wednesday.  Best of all, the program is available to anyone in the community.

Each box contains a variety of seasonal, fresh fruits ad vegetables.  Boxes include 2 pounds of carrots, 2 pounds of onions, 3 pounds of apples and 10 pounds of potatoes, plus about 5-6 additional fruits and vegetables.

Chef Bev teaches...

This month we caught up with Chef Bev and the Coordinators of the program at Barrie Free Methodist Church where the food is packed and distributed by a small army of dedicated volunteers.  As a special treat, Chef Bev was creating an incredible recipe to show one of the many ways to use the contents of the Good Food Box and reap the rewards of fine, fresh food with great taste.

Urban Pantry Barrie also assists the community with cooking classes and community gardens.  Run under the umbrella of the CMHA, they are an integral part of our community.  Today’s rewarding meal will be shared with The Women and Children’s Shelter, Barrie.

Ginger Carrot Soup

Prep Time: 10 minutes

Cook Time: 46 Minutes

Serves 3 – 4

This easy 7-ingredient soup is excellent for warming up on cold nights.  With a luscious creamy texture from the blended carrots, it’s totally vegan – no dairy required.

1 tablespoon extra virgin olive oil

1 cup chopped yellow onions

3 garlic cloves, smashed

2 heaping cups chopped carrots

1 1/2 teaspoons grated fresh ginger

1 tablespoon apple cider vinegar

3-4 cups vegetable broth

Sea salt and fresh black pepper

coconut milk for garnish, optional

dollops of pesto, optional

  1. Heat the olive oil in a large pot over medium heat.  Add the onions and a generous pinch of salt and pepper and cook until softened, stirring occasionally about 8 minutes.  Add the smashed garlic cloves (they’ll get blended later) and carrots to the pot and cook about 8 minutes more, stirring occasionally.
  2. Stir in the ginger, then add the apple cider vinegar, and then add 3 to 4 cups of broth, depending on your desired consistency.  Reduce to a simmer and cook until the carrots are soft, about 30 minutes.
  3. Let cool slightly and transfer to a blender.  Blend until smooth.  Tate and adjust seasonings.  Add maple syrup, if desired.
  4. Serve with a drizzle of coconut milk and/or a dollop of pesto, if desired.
  5. ENJOY!
